Chimichurri
 


Ingredients

1 1/2 cup parsley (fresh)
1 tbsp. oregano (fresh)
6 garlic clove (quartered)
3/4 cup olive oil
3 tbsp. white wine vinegar
1 tbsp. kosher salt
1 tsp. pepper (ground)

Instructions

  1. Separate parsley from the stem.
  2. Put parsley, garlic, and oregano in food processor briefly until ground but not mushy.
  3. Mix in remaining ingredients while stirring with spooon.

Nevertheless, it tastes good on toasted bread too and I must formally decree this recipe "vegetarian."

This is best served on top of churrasco. Churrasco is some weird cut of meat that is very popular here and in Latin America, but not so much in the US. I think it may sometimes be referred to as "skirt steak" in the US. Its one of the few items of red meat we eat consistently. Its so good I'm sure its bad for us, but I think its well worth its weight in denial.
