Ingredients

1 1/2 LB. turkey (ground) |

1 onion |

1/2 cup bread crumbs (fresh) |
|
1/2 can parsley (fresh) |
|
3 garlic clove (chopped) |
|
1 1/2 tbsp. cajun seasoning (use 1 tsp cayenne, black, and white peppers - plus 1 tsp salt and 1/2 tsp nutmeg instead of "cajun spice") |

1 egg white (beaten) |

2 tsp. cumin (ground) |
|
1 tsp. thyme (dried) |

Instructions
- Preheat oven at 350 degrees.
- Combine ingredients in a large bowl. Season with salt and pepper.
- Place turkey mixture in 9'x 5' non-stick loaf pan. Cover and bake 20 minutes.
- If desired, covered with creloe or other spicy mustard.
- Bake uncovered another 35 minutes.
- Let stand 10 minutes.
- Remove from pan and cut into slices.
