Shrimp Tacos
 


Ingredients

Shrimp
1 Sm. Onion
1 Pkg. Mushrooms
1 Can Black Beans, RINSED!
Spices: s n p, adobo, chili powder, cumin
avocado/ nature's cheese
tortillas, I prefer soft
chili-garlic paste (optional)
1 can of diced tomatoes

Instructions

  1. 1. If it's frozen shrimp you have, thaw it. Then let it marinate in a little bit of chili-garlic paste (Asian food stores) or in the spice mixture listed above.
  2. 2. Heat a little olive oil in large skillet, add diced onion and sautee a few minutes. Add sliced, RINSED! mushrooms and sautee a couple of minutes.
  3. 2. Add a splash of beer and drink the rest while preparations continue.
  4. 3. Add beans, tomatoes and spices to un mezcla de mush/onion and cook (on med.)until much liquid is cooked away and sauce has thickened (10-15 min).
  5. 4. Quick saute shrimps in a little olive oil for about 5 minutes in separate pan.
  6. 5. Mix the shrimp into the bean mixture and spoon onto heated tortillas with a little avocado.
  7. YIELDS: 2 satisfying tacos per person
