Green beans a la Kari
 

Kari found this recipe somewhere. I added the blanching step because sometimes the beans are too tough. If the thought of blanching makes you run away, you could just saute the beans for a longer time.

Ingredients

green 1 lb. beans, washed and ends picked
1 T. nutmeg
1/2 c. slivered almonds
olive oil
salt & pepper

Instructions

  1. Boil water and blanch green beans for 1 minute. Drain.
  2. Heat 1-2 T. olive oil in a large non-stick pan. Saute green beans for 5 minutes.
  3. Add nutmeg and almonds and saute for another 5 minutes, or until beans are desired tenderness.
  4. Salt and pepper before serving.
  5. Adjust nutmeg and almonds as desired.
