Ingredients

2-3 large catfish fillets |

1/2 c. crushed walnuts |

3/4 c. crushed breadcrumbs or cornmeal or a combination |

1 T. cornstarch |

2 T. paprika |

1 t. cayenne pepper |

salt and pepper |

couple dashes Adobe seasoning |
|
1/2 c. skim milk |

olive oil spray |

Instructions
- Preheat oven to 500.
- Mix the walnuts, breadcrumbs, cornstarch, paprika, cayenne, adobe and salt and pepper in a bowl.
- Dredge catfish fillets in milk, then in combined dry ingredients. If the catfish fillets are somewhat thick and won't break apart that easily, you can also put the dry ingredients in a ziploc bag and put the milk-dipped fillets into the bag and shake to coat--works really well.
- Spray a glass 13x9 baking dish and place catfish in dish. Lightly spray catfish as well.
- Bake for 8 minutes. Flip fillets halfway through baking.
- Serve with mango-tomatillo salsa and rice.
