Marinated Grilled Pork
 

Especially to balance the less than complimentary pork info posted this week, I must share this delicious recipe. Pork with a spicy-salty paste grilled onto the edges should clearly be used as a special occasion treat, not as weekly fare. (Note that I also suggest splitting it among a party of people.) Adapted from an adapted recipe, this has been a summer BBQ hit.

Ingredients

2-3 lbs boneless pork meat
8 cloves garlic
2 cups loosely packed cilantro leaves and stems
1/3 cup chipotles in adobo sauce (use only 3 tbsps chipotles to get the smoky flavor without the spiciness)
4 tbsps ground cumin seeds
2 tbsps mustard powder
3-4 tbsps ground coriander seeds
4 tbsps salt
3 tbsps ground black pepper
juice of 4 limes
1/3 cup olive oil

Instructions

  1. Put all ingredients (except the pork) into a food processor and puree. This will produce a thick brown paste.
  2. Cut pork into thick strips and cover all sides of them with the spice paste.
  3. Refrigerate the paste-covered pork until grilling time.
  4. Grill the paste-covered pork at high heat for about 10 minutes. The paste will form a grilled crust around the meat.
  5. Cut into pieces, distribute, and eat happily.
