Cherry tomato, leek & basil pasta
 

This is so easy and so delicious, especially during tomato season. Also works with fresh scallions instead of leeks. I just realized this is the same recipe as the garlic chives and tomato recipe. Whoops! It's just so good I got excited and had to share. Again.

Ingredients

1 box of cherry or grape tomatoes
2-3 c. leeks, cut into 1 inch-long thin strips
1/2 c. fresh basil, julienned
chopped fresh garlic
pasta of choice, cooked
olive oil
cheese like parmesean reggiano, asiago, grana padana
salt, pepper

Instructions

  1. Heat oil over medium heat and add garlic. Sautee for a minute and then add tomatoes and chopped leeks. Sautee until the tomatoes are heated through, are slightly wilted and/or start to burst.
  2. Remove from heat and stir in basil. Add salt and freshly ground pepper.
  3. Stir in pasta and toss.
  4. Grate cheese on top.

Hey Connie: This is something I recently tried with this recipe. Maybe you'll like it. Instead of sauteed tomatoes, I cut them in half, drizzled with olive oil and salt, and stuck them in the oven for about 45 minutes at 250. Then, instead of the parmesan, I added goat cheese to the hot pasta, which when stirred quickly melted into a cheese sauce. It was pretty tasty and really easy.
