red cabbage & apple salad
 


Ingredients

1 small head red cabbage
2 granny smith apples
1 c. walnuts
1/4 c. flavored vinegar, like blood orange
1/8 c. olive oil
1 T. dijon mustard

Instructions

  1. Finely shred the cabbage.
  2. Cut the apples into thin 1-inch strips
  3. Toss the two together with walnuts.
  4. Whisk the oil, vinegar and mustard together. Pour over the salad and toss well.
  5. Let sit for awhile, 45 minutes or so, before eating.
