Buttermillk Pancakes
 

Best pancakes ever - gives you a reason to stay in on a weekend. The secret to keeping these cakes super fluffy is to *not* overmix the wet and dry ingredients! These also freeze very well - make a double recipie (I have one friend who triples it, but she's nuts...) and freeze the rest for weekday pancake happiness.

Ingredients

1 cup flour
1 and 1/4 tsp baking powder
3 T sugar
1/4 tsp salt
1 cup buttermilk
1 egg
3 T butter, melted

Instructions

  1. Not hard at all - mix the dry ingredients together and in a seperate bowl, mix the wet. Then combine but don't overmix.
  2. Bake on a hot griddle - flip a little before all the bubbles set and bake the other side.
