Escarole Soup
 

This is my Grandmother's "garbage soup" eaten mostly in January and February. I never liked it as a kid (though I did like to eat only the pepperoni out of the soup), I have now grown fond of it. Enjoy!

  1. Escarole Soup

  4. First, make your chicken soup
  5. • Boil a small chicken
  6. • Add chopped carrots, onion, celery
  7. • In a separate pan of water with some salt added, boil chopped escarole – the curly kind if possible – it’s tender
  8. • Cook escarole until it is tender
  9. • (REMOVE THE CHICKEN FROM THE SOUP)
  10. • Drain and add the cooked escarole to the chicken soup
  11. • Salt and pepper to taste
  12. • Cut one stick of good pepperoni into rounds and add.
  13. You can also add tiny meatballs – if you like
  14. • In a mixing bowl mix together;
  15. o pound good hamburger finely ground
  16. o finely ground parsley
  17. o grated cheese, salt, pepper to taste
  18. o 1 egg
  19. o cup bread crumbs
  20. o pinch of nutmeg
  21. • Roll out the mixture into small, round meatballs and drop in the soup
  22. • The meatballs will be very soft. DO NOT STIR the soup until the meatballs are cooked
  23. • OPTIONAL:
  24. o Add cup of rice (no more than that)
