Greek orzo salad
 

Great for summer BBQs

Ingredients

1 lb orzo
1 cube feta (about 8 oz), cut into small cubes
1 package washed baby spinach (about 8 oz)
1.5 c kalamata olives without pits, sliced - green olives also work well, especially if they are marinated in chopped garlic garlic
1/3 c. olive oil
1/3 c. lemon juice (fresh is best but bottled is okay)
1 T garlic powder
salt & pepper to taste
1 small red onion or 1/2 large red onion, diced into small pieces

Instructions

  1. Cook and drain orzo. Once it is cooled, add feta, olives, spinach, red onion. Mix oil, lemon juice, garlic powder, salt and pepper together. Dress orzo mixture.
