Chipotle Chicken Fajitas
 

If Tricia and I had gotten married (to each other), then Chipotle Chicken Fajitas would have been required to give a speech at the wedding. We used to make these once a week in the Brooklyn ghettoplex apartment.

Ingredients

4 slices turkey bacon
3 chicken breasts
1/4 tsp. salt
1/4 tsp. pepper
1/2 cup onion (chopped)
1/2 tsp. coriander (ground)
3 garlic clove
4 chipotle chilies (canned, marinated in adobo sauce)
1 cup salsa
1 red pepper
cilantro (rinsed & drained)
flour tortillas
marinade ingredients (sherry, cornstarch, salt, sugar)
1/2 cup shredded cheddar cheese
sour cream

Instructions

  1. Cut chicken into strips, marinate for 10 min. in cooking sherry, 2 tsp corn starch, 1/2 tsp salt, dash of sugar
  2. Cook turkey bacon over medium heat until crisp. Set aside.
  3. Saute chicken strips in bacon drippings for 2 min.
  4. Add onion, coriander, garlic, chipotles to pan. Saute 3 minutes.
  5. Stir in salsa and add bell peppers.
  6. Cover and cook in medium heat for 12 minutes.
  7. Warm the flour torillas, fill with mixture, and top with crumbled turkey bacon, cheddear cheese, cilantro, sour cream

These fuckers are really tasty, so try some today! For those who indulge in the illicit consumption of pig products, try it with real bacon, which makes it even better. Every three weeks I seem to get a craving for them.

"F*cking A!" in the voice of the construction worker in Office Space. The most incredible part of this recipe is that it was based from a recipe from Cooking Light (although I think Dana and Tricia tripled the chipotle). Incredible.
