4 slices turkey bacon |

3 chicken breasts |

1/4 tsp. salt |

1/4 tsp. pepper |
|
1/2 cup onion (chopped) |

1/2 tsp. coriander (ground) |

3 garlic clove |

4 chipotle chilies (canned, marinated in adobo sauce) |

1 cup salsa |
|
1 red pepper |
|
cilantro (rinsed & drained) |
|
flour tortillas |
|
marinade ingredients (sherry, cornstarch, salt, sugar) |
|
1/2 cup shredded cheddar cheese |

Instructions
- Cut chicken into strips, marinate for 10 min. in cooking sherry, 2 tsp corn starch, 1/2 tsp salt, dash of sugar
- Cook turkey bacon over medium heat until crisp. Set aside.
- Saute chicken strips in bacon drippings for 2 min.
- Add onion, coriander, garlic, chipotles to pan. Saute 3 minutes.
- Stir in salsa and add bell peppers.
- Cover and cook in medium heat for 12 minutes.
- Warm the flour torillas, fill with mixture, and top with crumbled turkey bacon, cheddear cheese, cilantro, sour cream
