eat it on a bed of hot, jasmine rice

beef, hot italian pepper, fresh garlic, fresh or very hot dried red chili pepper, cornstarch, black pepper, white wine, chicken stock, soy sauce, oyster sauce, chinese cooking wine (very dry white wine)

Instructions

  1. cut beef into matchstick peices– sorta shredding... sometimes i pound the beef first to make it tender and easier to shred.
  2. take shredded beef and put it in a bowl. add about 3 tablespoons of chinese cooking or dry white wine, 1 tablespoon soysauce, fresh minced garlic, black pepper and 2 tablespoons cornstarch and let sit
  3. cut hot italian pepper (you know, the long green peppers that sorta look like pointy elf shoes, they are not actually that spicy) in julienned matchstick size strips– set aside
  4. heat oil, red pepper (as much as you can handle) and fresh garlic in large fry pan, add beef and pepper, slowly add about a 1/4 cup of chicken stock, let the pepper and garlic infuse the meat... and then add about 4 tablespoons oyster sauce and 1 tablespoon soysauce... let everything simmer and watch the consistency of the sauce– it should be thick enough to sit on top of rice... if too thin (add cornstarch to a little bit of room temp chicken stock and mix– then pour into saucepan while quickly stirring)
  5. i don't actually use measurements so i just made those up– but they are to just give you an idea... feel free to do what tastes good to you– it's a simple recipe but very tastey for spicy beef lovers
