chinese spicy beef & pepper

Instructions
- cut beef into matchstick peices– sorta shredding... sometimes i pound the beef first to make it tender and easier to shred.
- take shredded beef and put it in a bowl. add about 3 tablespoons of chinese cooking or dry white wine, 1 tablespoon soysauce, fresh minced garlic, black pepper and 2 tablespoons cornstarch and let sit
- cut hot italian pepper (you know, the long green peppers that sorta look like pointy elf shoes, they are not actually that spicy) in julienned matchstick size strips– set aside
- heat oil, red pepper (as much as you can handle) and fresh garlic in large fry pan, add beef and pepper, slowly add about a 1/4 cup of chicken stock, let the pepper and garlic infuse the meat... and then add about 4 tablespoons oyster sauce and 1 tablespoon soysauce... let everything simmer and watch the consistency of the sauce– it should be thick enough to sit on top of rice... if too thin (add cornstarch to a little bit of room temp chicken stock and mix– then pour into saucepan while quickly stirring)
- i don't actually use measurements so i just made those up– but they are to just give you an idea... feel free to do what tastes good to you– it's a simple recipe but very tastey for spicy beef lovers
