Southern breakfast!

Ingredients

1 16-oz can of salmon or equivalent fresh salmon, cooked in manner of your liking
1 small onion, chopped
fresh parsley, chopped
1 egg
1 cup breadcrumbs, fresh or otherwise
paprika
salt and pepper to taste
cooking oil
couple squeezes fresh lemon juice

Instructions

  1. Throw everything together except for the oil and mash it up real good.
  2. Heat 2 T. oil in large non-stick pan. Drop in heaping tablespoons of salmon mixture until pan is full. Fry both sides until brown, 2-4 minutes a side.
  3. Remove from heat, drain on paper towels before serving.
