Ingredients

1 16-oz can of salmon or equivalent fresh salmon, cooked in manner of your liking |
|
1 small onion, chopped |
|
fresh parsley, chopped |
|
1 egg |
|
1 cup breadcrumbs, fresh or otherwise |
|
paprika |
|
salt and pepper to taste |
|
cooking oil |
|
couple squeezes fresh lemon juice |

Instructions
- Throw everything together except for the oil and mash it up real good.
- Heat 2 T. oil in large non-stick pan. Drop in heaping tablespoons of salmon mixture until pan is full. Fry both sides until brown, 2-4 minutes a side.
- Remove from heat, drain on paper towels before serving.
