red lentil chili
 

Red lentils do not require pre-soaking. Yay! The recipe is easily doubled.

Ingredients

1 cup red lentils
1/2 c. chopped onion
1/2 c. chopped green or red pepper
1 garlic clove, chopped
1 8 oz. can of diced tomatoes (preferably with chilies)
1 small can corn
chili powder according to taste
salt, pepper according to taste
a little water
a pinch of cinnamon

Instructions

  1. Wash and pick through lentils.
  2. Saute the onion, pepper, garlic.
  3. Add tomatoes, corn and about 1/3 c. water. Bring to a simmer and add the lentils.
  4. Add the cinnamon for a slightly sweet aroma.
  5. Simmer until lentils are tender, about 15-20 minutes.
  6. Eat with tortilla chips--maybe blue ones. If you add a glass of milk, you've got red, white and blue to show support for our government and our troops and this war. Or is it support for France?
